If I have a dietary restriction or food
allergy, how much flexibility does the
kitchen have when preparing a meal?
Executive Chef Rick: We have great
flexibility to accommodate dietary
restrictions and food allergies. We are
happy to modify dishes, substitute
ingredients, or create a special
preparation when needed. Our goal
is to make sure every member enjoys
a delicious meal while also taking
their dietary needs seriously. For
significant allergies, we ask members
to communicate with their server
or the F&B team in advance
so the kitchen can
prepare safely and
appropriately.
Can members order
something that isn’t
currently on the
menu if they have a
special request?
Becky Wright: Off-
menu requests are
not uncommon and
Executive Chef Carr
and the team do everything possible, on
a case-by-case basis, to accommodate
them. While we can’t guarantee we
can satisfy a special request, prior
knowledge does help make this more
achievable.
How much advance notice does the Food
& Beverage team need to accommodate
a special meal, private dinner or large
group?
Executive Chef Rick: We recommend
giving the F&B team five to seven
days’ advance notice for special
meals, private dinners,
and larger groups. This
allows me, with our
team, to plan menus,
purchase specialty
ingredients,
and create a
personalized
experience.
While we will
always do
our best to
accommodate
last-minute
requests,
advance notice
gives us the
best opportunity
to make the event
truly special.
Can I customize a menu or wine pairing
for a private event, dinner or celebration?
Kristina Jarrett: Yes. Eliana, Calloway,
Executive Chef Rick and I will work hard
to make sure your event is exactly what
you envisioned.
What are some of the behind-the-
scenes services Food & Beverage
provides that members may not realize
are available to them?
Executive Chef Rick: Our F&B team
offers more than what members see
on the menu. We can provide custom
menus, smoked meats in bulk, special
cuts of meat, specialty ingredients, and
off-menu requests. We can also help
source hard-to-find ingredients for
members when needed. I'm happy to
work with members to create unique,
one-of-a-kind dining experiences. If
you have an idea, just ask!
If I’m bringing a group to the Club for
golf, tennis or another activity, can Food
& Beverage help build a meal or snack
experience around the event?
Calloway Kocher: Absolutely! We can
accommodate event ideas across all
departments, whether you’re looking for
a themed snack and beverage, a casual
spread, or a full meal. If you have an
idea, let’s talk about it! Eliana Engle, as
our events coordinator, is the point of
contact for all member-hosted events
and can help bring your vision to life.
Who should I talk to when I have a food,
beverage or event idea that doesn’t quite
fit the traditional menu?
Calloway Kocher: Our team does a
great job facilitating outside-the-box
events. Bring us your idea, even if it’s
something we’ve never done before. We
love getting creative and finding ways to
make special requests and unique ideas
work for our members.
What is one Food & Beverage “secret”
you wish every Prairie Dunes member
knew?
Executive Chef Rick: Just ask! One of
the best-kept secrets is how flexible
our team can be. If you have an idea, a
special request, or something you would
love to see on your plate, come talk to
us. Our goal is to make dining at Prairie
Dunes personal, memorable, and a little
unexpected.
